Korean Corn Dog Recipe With Mozzarella Cheese

A crisp, golden coating and a stretchy mozzarella center make Korean corn dogs a satisfying snack to share. This homemade version uses a light yeast dough, savory hot dogs, and a touch of sugar for the sweet-and-salty finish.

You can prepare them with a few familiar ingredients. Give the dough time to rise, then fry the skewers until the outside is crisp and the cheese is melted.

What Makes Korean Corn Dogs Different?

Korean corn dogs use a yeast-based dough instead of the cornmeal batter found on classic American corn dogs. The dough puffs as it fries, creating a light, chewy coating with a crisp outside.

Mozzarella is often paired with sausage, or used on its own. A sprinkle of sugar adds a sweet note that balances the savory filling. Panko breadcrumbs provide extra crunch, and you can also try potato cubes or crushed ramen noodles.

Ingredients

This recipe makes about six Korean corn dogs.

For the Dough

  • 1 cup warm water, about 110°F (43°C)
  • 1 tablespoon active dry yeast
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 ¾ cups all-purpose flour
  • ½ cup cornstarch

For the Filling

  • 3 mozzarella cheese sticks, cut in half
  • 3 beef or pork hot dogs, cut in half
  • 6 wooden skewers

For Coating and Frying

  • 1 cup panko breadcrumbs
  • ½ cup granulated sugar, for coating
  • Neutral oil, such as vegetable or canola oil
  • Optional dipping sauces, such as ketchup, mayonnaise, or spicy mayo

How to Make Korean Corn Dogs

1. Prepare the Dough

Stir the warm water, yeast, and sugar together in a large bowl. Let the mixture sit for about five minutes, until foamy. This shows that the yeast is active.

Add the salt, flour, and cornstarch, then mix until a sticky dough forms. Cover the bowl and let the dough rise in a warm spot for about one hour, or until it has nearly doubled in size.

2. Skewer the Fillings

Thread one piece of hot dog and one piece of mozzarella onto each skewer. Place the cheese above the hot dog, or use two pieces of mozzarella for an all-cheese version.

Pat the fillings dry with a paper towel. A dry surface helps the dough stay in place while frying.

3. Coat the Skewers

Transfer the risen dough to a tall glass or narrow container so the skewers are easier to dip. Lightly coat each filling with flour, then dip it into the dough and turn it until fully covered.

Let excess dough drip off, then roll the skewer in panko. Press gently so the crumbs stick all over.

4. Fry Until Golden

Heat the oil in a deep pot to 350°F (175°C). If you don’t have a thermometer, add a small piece of dough to the oil. It should sizzle and rise to the surface within a few seconds.

Fry one or two corn dogs at a time for three to four minutes, turning occasionally until evenly golden. Avoid crowding the pot, since too many skewers can lower the oil temperature and make the coating greasy.

Transfer the corn dogs to a wire rack or paper towels to drain.

5. Add the Sugar

While the corn dogs are still hot, roll them in granulated sugar. Serve right away with your favorite dipping sauce for the best cheese pull.

Tips for a Stretchy Cheese Center

A few small adjustments can help keep the cheese melted without letting it escape.

  • Use low-moisture mozzarella, such as string cheese, since it melts smoothly without releasing much moisture.
  • Keep a close eye on the frying time. Overcooking can cause the cheese to leak through the coating.
  • Serve the corn dogs hot, while the mozzarella is still soft and stretchy.
  • If the cheese melts too quickly, freeze the filled skewers for 15 minutes before coating and frying.

Korean Corn Dog Variations

Once you have the basic method down, try a different coating or filling.

  1. Potato corn dogs: Press small diced potatoes into the dough before adding the panko.
  2. Ramen corn dogs: Replace the panko with crushed uncooked instant noodles for a crunchy coating.
  3. Spicy corn dogs: Add a pinch of gochugaru to the dough or serve with spicy mayo.
  4. All-cheese corn dogs: Leave out the hot dog and use mozzarella for a meat-free option.

What to Serve With Korean Corn Dogs

Serve these corn dogs as a snack, party food, or casual meal with ketchup, honey mustard, or creamy garlic mayo. A cucumber salad or pickled radish adds a cool, tangy contrast to the rich cheese and crisp coating.

For a gathering, set out a few sauces so everyone can choose their favorite.

Make Korean Corn Dogs at Home

This Korean corn dog recipe pairs fluffy yeast dough with hot dogs, melted mozzarella, and a crisp panko coating. A little sugar gives each bite the classic sweet-and-savory finish, and the steps are simple enough to follow in a home kitchen.

Prepare the skewers while the dough rises, then fry them just before serving. That way, the coating stays crisp and the cheese remains warm and stretchy.
